For the avocado mayonnaise dressing:
1 ripe avocado
1/4 cup mayonnaise
1 tablespoon rice vinegar
1 tablespoon honey
1-2 jalapenos, seeded and chopped (adjust to how spicy you want it)

Tuna Salad:
2 cans tuna, drained and thinly sliced
1 head butter lettuce, washed and torn into bite-size pieces
1/2 cup dried cranberries
1 green apple, thinly sliced

Directions:
Prepare avocado mayo dressing:
Cut a ripe avocado in half, remove the core, and scoop out the flesh into a blender or food processor.
Place mayonnaise, rice vinegar, honey, and chopped jalapeños in a blender.
Stir until you get a smooth, creamy dressing. Season with salt and pepper. Adjust the amount of jalapeños depending on how spicy you want it. Set dressing aside.
Assemble the tuna salad:
In a large mixing bowl, combine the tuna flakes with a few tablespoons of avocado mayonnaise. Stir well to coat the tuna with the dressing.
In a separate large salad bowl, layer the torn butter lettuce as the base for the salad.
Arrange the sliced green apple, red bell pepper, and dried cranberries on top of the lettuce.
Top salad with sliced tuna.
