Hearty Chicken Dumplings

Experience the warm embrace of comfort food with our Easy Chicken and Dumplings recipe. A delicious blend of savory chicken, flavorful vegetables, and soft dumplings, this dish is perfect for a cozy family dinner. Let’s get cooking!

Ingredients:

2 boxes of chicken stock
2 cans of cream of chicken soup
2 stalks of celery, chopped
1 onion, diced
Carrots, chopped
1 Rotisserie Chicken
1 can of Grands biscuits, rolled out and cut
Butter (for sautéing)
Salt and pepper (to taste)
Cornstarch (optional, for thickening)

Instructions:

In a large pot or Dutch oven, sauté the chopped onion, celery, and carrots in a little butter over medium heat until they become soft and fragrant.
Pour in the chicken stock and add the cream of chicken soup. Stir well and bring the mixture to a boil.
While the mixture is coming to a boil, shred the tender meat from the Rotisserie Chicken. You can use both white and dark meat for a richer flavor.
Once the soup mixture is boiling, add the shredded chicken, and bring it back to a boil.
Now, let’s make the dumplings. Roll out the Grands biscuits and cut them into pieces. These will be the delightful dumplings that add texture to your dish.
Add the dumplings to the boiling pot. Boil the mixture for 15-20 minutes, stirring occasionally to prevent sticking. The dumplings will cook and expand, adding thickness and heartiness to your dish.
If you find that the mixture is not as thick as you like, you can make a cornstarch slurry. Simply mix a few tablespoons of cornstarch with cold water and stir it into the pot. Continue cooking and stirring until the desired thickness is reached.
Season your Chicken and Dumplings with salt and pepper to taste. Adjust the seasonings to your preference.
