Poolside Broccoli Salad


°5 c broccoli, cut into florets

°1 apple, seeded and cut into cubes

°1 pear, seeded and cut into cubes

°1/4 c finely red onion

°1 cup cashews (roasted, optional)

°1 cup dried cranberries

+The sauce:

°1/2 cup mayonnaise

°1/2 cup Greek yogurt

°2 tablespoons of lemon juice

°3 tablespoons of honey

°Kosher salt and freshly ground pepper, to taste

To prepare

In bowl, whisking mayonnaise and yogurt, then adding lemon juice and honey.

Season to taste with salt & pepper.

In a large bowl, combine broccoli florets, apple and pear cubes, red onion, cashews and cranberries, and stir to combine.

Pour the marinade over the broccoli mixture, then toss until everything is evenly coated.

Serve immediately or refrigerate for at least 20 minutes, giving the flavors a chance to develop and build.
